  • 1. Pour water over beans placed into a pot and cook it. Add sliced onion, a handful of bay leaves, pepper, finely sliced parsnips, carrot and parsley.
  • 2. Do not add salt and leave the mass to be cooked slowly. When the beans are cooked, add salt.
  • 3. Fry four cloves of finely sliced onion in a well oiled pot. When the mass becomes glassy, add a half cup of water, stir and leave the mass to sizzle.
  • 4. When the water evaporates, add two spoons of flour and fry for a short while. Add a teaspoon of sweet ground red pepper. Stir for a short while and add the mass into the already cooked beans.
  • 5. The bean stew should be thick in order to properly stuff paprika. Add some salt and a tea spoon or two of sugar to the bean stew, depending on taste.
  • 6. When the mass evens, take the stew of the oven and begin to stuff cleaned and prepared sweet red paprika.
  • 7. Place the paprika into an oiled pot and bake them in the oven for a short while until they crust mildly.

Ingredients

300 g of beans from the Tetovo region of Macedonia, 4 medium sized cloves of onion, bay leaves, salt and pepper. A root of parsnip, parsley and carrot, a tea spoon of mixed sweet Aleva red pepper, oil, 2 spoons of flour, freshly picked or dried paprika.
